Plain fried noodles
This recipe is for a takeaway style plain fried noodles - I promise this recipe is much tastier than the title sounds.
Ingredients
Measurements are approximate.
- Choice of noodle (see below)
- 1 onion
- 2 tbsp. vegetable oil (~30ml)
- 1½ tbsp. light soy sauce (~25ml)
- 1 tbsp. dark soy sauce (~15ml)
- Handful of bean sprouts (~50g-ish, I've never measured this)
- Spring onion
- Pinch of salt
- Pinch of MSG (optional)
- Sesame oil (optional)
I tend to use dried egg noodles for this as I am a broke uni student, but they can be substituted for any type of chow mein noodles, or udon noodles. Never use store brand noodles though, as they are terrible.
Preparation
- Blanch egg noodles according to instructions, then drain and rinse with cold water. (This removes the starchy / eggy flavour.)
- Slice a small onion and cut spring onion into long pieces.
- Mix light and dark soy sauce with sesame oil in a bowl (if using).
Method
- Heat vegetable oil in a wok (or frying pan) on high heat.
- Add sliced onion. Fry until softened (1-2 min. later).
- Add noodles, and let them sit for 15 seconds.
- Coat noodles with light and dark soy sauce, along with a pinch of salt and MSG (if using).
- Toss until all noodles have a light coating.
- Add bean sprouts and spring onion, and mix with noodles.
- Cook until bean sprouts have softened. Serve immediately.
